Recipe: Date Cake

Ingredients

  1. Dates 300 g (peeled and pitted)
  2. Wheat Flour 175 g
  3. Semolina 50 g
  4. Sugar 100 g
  5. MeadowLea 100 g
  6. 02 Eggs
  7. 01 teaspoon of Baking Powder
  8. ¼ teaspoon of Baking Soda
  9. ½ teaspoon of Nutmeg
  10. 15 Cashew
  11. ½ teaspoon of Cinnamon Powder
  12. 01 teaspoon of Vanilla Essence

Cooking Method

  • Put the peeled and pitted dates into a bowl, mix the baking powder and add some lukewarm water to cover the dates. Then mash it well and keep it covered for about 2 hours.
  • Cut the cashews into pieces. Spread MeadowLea on a cake baking tray and spread oil paper on it.
  • Add nutmeg, cinnamon powder, and baking powder to the wheat mixture and sift well with a sieve. Then add the semolina to it.
  • In a separate bowl, add the sugar, MeadowLea, vanilla essence and eggs to it and mix well with the wheat flour mixture.
  • Turn on the oven 10 minutes prior to baking.
  • Add the cashews into a separate bowl, put the dates to it and mix well.
  • Mix the previously prepared MeadowLea mixture with the date mixture. Place on the baking tray and bake at 160⁰C for 50 minutes.
